11 - 1 small garlic clove, finely minced
12 - 1/4 tsp sea salt
13 - Freshly ground black pepper, to taste

# Directions:

01 - Place chopped kale in a large salad bowl. Drizzle with 1 teaspoon olive oil and pinch of salt. Massage kale with hands for 2-3 minutes until leaves soften and darken in color.
02 - Add sliced apples, cheddar cheese, toasted nuts, pumpkin seeds, and dried cranberries to the massaged kale.
03 - In small jar or bowl, whisk together remaining olive oil, apple cider vinegar, Dijon mustard, honey, minced garlic, salt, and pepper until thoroughly emulsified.

05 - Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately for maximum crunch or let stand 10-15 minutes for more tender kale texture.

# Expert Hints:

01 -
  • This salad somehow makes hearty kale feel refreshing instead of heavy
  • The combination of sharp cheese and sweet apples is genuinely hard to stop eating
  • It holds up beautifully for hours unlike delicate greens that wilt sadly
02 -
  • The kale massaging step is not optional it transforms tough leaves into something completely different
  • Letting the dressed salad rest for 15 minutes makes the texture even better but eat within a few hours
03 -
  • Remove those tough kale stems before chopping or you will regret every bite
  • Use a box grater to shave the cheese into delicate ribbons that melt on your tongue
