02 - 1 cup shredded carrots (about 2 medium carrots, peeled and finely grated)
03 - 1/2 cup raw walnuts
04 - 1/3 cup raw pecans
05 - 1/2 cup pitted Medjool dates (about 6 large), chopped
06 - 1/4 cup unsweetened shredded coconut
07 - 2 tbsp maple syrup or honey
08 - 1 tsp vanilla extract

→ Spices

09 - 1 tsp ground cinnamon
10 - 1/4 tsp ground ginger
11 - 1/8 tsp ground nutmeg
12 - Pinch of salt

→ Optional Add-Ins

13 - 2 tbsp raisins
14 - 2 tbsp mini chocolate chips
15 - 2 tbsp chia seeds

→ For Rolling (Optional)

16 - 1/4 cup unsweetened shredded coconut

# Directions:

01 - Add rolled oats, raw walnuts, and raw pecans to a food processor. Pulse until finely ground, scraping down sides as needed for even consistency.
02 - Add shredded carrots, chopped Medjool dates, unsweetened shredded coconut, maple syrup or honey, vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and salt. Process until the mixture becomes sticky and holds together when pressed. Scrape down sides periodically to ensure even incorporation.
03 - Transfer mixture to a bowl. If using, fold in raisins, mini chocolate chips, or chia seeds with a spatula until evenly distributed throughout the mixture.
04 - Scoop out tablespoon-sized portions and roll into smooth, compact balls using your hands. Apply gentle pressure to ensure they hold their shape.
05 - Roll each bite in unsweetened shredded coconut for coating, if desired. Press gently to help the coconut adhere to the surface.
06 - Refrigerate for at least 30 minutes before serving to allow flavors to meld and achieve optimal texture. Store leftovers in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.

# Expert Hints:

01 -
  • They taste exactly like carrot cake but come together in under 20 minutes
  • The dates and maple syrup provide natural sweetness without any refined sugar
  • You can keep them in the fridge for healthy snacking all week long
02 -
  • The mixture should hold together when squeezed but still feel slightly sticky to the touch
  • If your dates are dried out, soak them in warm water for 10 minutes before processing
  • These bites actually taste better the next day once the flavors have had time to meld
03 -
  • Line your container with parchment paper to prevent sticking
  • Double the recipe and freeze half because they disappear faster than you expect
