01 - Combine strawberries and lemon juice in a blender. Process until completely smooth, scraping down sides as needed.
02 - Transfer puree to a small saucepan. Stir in honey or maple syrup until incorporated.
03 - Sprinkle gelatin over cold water in a separate bowl. Let stand for 3–5 minutes until mixture thickens and absorbs liquid.
04 - Heat strawberry mixture over medium-low heat for 2–3 minutes until just warmed through. Avoid boiling to preserve texture.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk continuously for approximately 2 minutes until gelatin dissolves completely and mixture is smooth.
06 - Carefully transfer mixture to silicone gummy molds or parchment-lined baking dish. Work quickly before mixture begins to set.
07 - Refrigerate for minimum 2 hours or until completely firm. Gummies should not stick to molds when fully set.
08 - Remove gummies from silicone molds or cut into bite-size pieces if using baking dish. Store in airtight container in refrigerator up to 1 week.
