Homemade Strawberry Gummies (Printable)

Naturally sweet, chewy strawberry gummies made with fresh fruit and gelatin. A fun, wholesome treat the whole family will love.

# What You'll Need:

→ Fruit Base

01 - 1 ½ cups fresh strawberries, hulled and halved
02 - 2–3 tablespoons honey or maple syrup
03 - 2 tablespoons fresh lemon juice

→ Gelatin Mixture

04 - 3 tablespoons unflavored gelatin powder
05 - ½ cup cold water

# Directions:

01 - Combine strawberries and lemon juice in a blender. Process until completely smooth, scraping down sides as needed.
02 - Transfer puree to a small saucepan. Stir in honey or maple syrup until incorporated.
03 - Sprinkle gelatin over cold water in a separate bowl. Let stand for 3–5 minutes until mixture thickens and absorbs liquid.
04 - Heat strawberry mixture over medium-low heat for 2–3 minutes until just warmed through. Avoid boiling to preserve texture.
05 - Add bloomed gelatin to warm strawberry mixture. Whisk continuously for approximately 2 minutes until gelatin dissolves completely and mixture is smooth.
06 - Carefully transfer mixture to silicone gummy molds or parchment-lined baking dish. Work quickly before mixture begins to set.
07 - Refrigerate for minimum 2 hours or until completely firm. Gummies should not stick to molds when fully set.
08 - Remove gummies from silicone molds or cut into bite-size pieces if using baking dish. Store in airtight container in refrigerator up to 1 week.

# Expert Hints:

01 -
  • Knowing exactly what goes into your familys treats instead of mysterious storebought ingredients
  • The way fresh strawberry flavor shines through without being overly sweet or artificial
02 -
  • Do not boil your fruit mixture after adding gelatin or it will lose its setting power completely
  • These soften quickly at room temperature so keep them chilled until just before serving
03 -
  • Silicone molds with small details are gorgeous but simple bears or hearts release more reliably
  • If your mixture starts setting too fast set your saucepan in a bowl of warm water to keep it liquid
