11 - Powdered sugar, for dusting

# Directions:

01 - Preheat oven to 350°F. Line a 9x9-inch baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a large bowl, cream together softened butter and granulated sugar until light and fluffy. Add flour and salt, mixing until just combined.
03 - Press dough evenly into bottom of prepared pan. Bake for 18-20 minutes or until lightly golden at edges.
04 - In separate bowl, whisk together sugar and flour. Add eggs, grapefruit juice, grapefruit zest, and lemon juice. Whisk until smooth and fully combined.
05 - Pour filling over hot crust immediately after it comes out of oven.
06 - Return pan to oven and bake for 18-22 minutes, until center is just set. Remove from oven and let cool completely in pan.
07 - Once cooled, lift out using parchment overhang and cut into bars. Dust with powdered sugar just before serving.

# Expert Hints:

01 -
  • The way the buttery crust melts into your mouth while the bright grapefruit custard wakes up your taste buds is the kind of dessert magic that makes people pause mid-bite
  • These bars strike this perfect balance that somehow feels refreshing and indulgent at the same time, like sunshine on a plate
02 -
  • The filling continues to set as it cools, so pulling it out when there's still a slight wobble in the center is actually perfect, over-baked filling gets rubbery
  • Room temperature ingredients for both the crust and filling make a huge difference in how smoothly everything comes together
03 -
  • If your grapefruits seem particularly tart, taste your filling before pouring and add an extra tablespoon of sugar if needed
  • A drop of natural red food coloring can boost the pink color without changing the flavor if you're serving these for a special occasion
