# Directions:

01 - Line a baking sheet with parchment paper or prepare a silicone mini muffin mold for easy removal.
02 - Combine almond flour, coconut flour, maple syrup or honey, melted coconut oil, vanilla extract, and salt in a mixing bowl. Stir thoroughly until a cohesive dough forms.
03 - Divide the base mixture into 16 equal portions and roll each into a ball. Place all balls on the prepared tray.
04 - Beat together cream cheese, Greek yogurt, protein powder, maple syrup or honey, lemon zest, and vanilla extract in a separate bowl until smooth and creamy.
05 - Heat blueberries and maple syrup or honey in a small saucepan over medium heat for 3 to 4 minutes. Mash gently while cooking until a thick compote forms. Allow to cool completely.

07 - Refrigerate the bites for at least 1 hour until firm and set before serving.

# Expert Hints:

01 -
  • They satisfy that cheesecake craving without turning on your oven or spending hours baking
  • You can grab two for a post-workout snack and actually feel good about it
02 -
  • The base mixture might seem too dry at first but keep mixing because the coconut flour needs time to absorb the liquid
  • Let the blueberry compote cool completely before swirling or it will melt the cheesecake filling into a purple mess
03 -
  • Use a small cookie scoop to portion out the base mixture so all your bites end up the same size
  • Room temperature ingredients mix together much smoother, so take the cream cheese out about thirty minutes before starting
