Agar Agar Fruit Jelly (Printable)

A light, vegan dessert made with agar agar and fresh mixed fruits. Perfect for summer entertaining.

# What You'll Need:

→ Jelly Base

01 - 2 cups water
02 - 1 1/2 teaspoons agar agar powder
03 - 1/2 cup granulated sugar
04 - 1/2 cup fruit juice (orange, apple, or mango)

→ Fresh Fruits

05 - 1/2 cup diced strawberries
06 - 1/2 cup diced kiwi
07 - 1/2 cup diced mango
08 - 1/2 cup diced pineapple
09 - 1/4 cup blueberries

# Directions:

01 - Wash, peel, and dice strawberries, kiwi, mango, and pineapple into small, bite-sized pieces. Rinse blueberries and set all prepared fruits aside.
02 - Combine water and agar agar powder in a medium saucepan. Whisk thoroughly until powder is completely dissolved.
03 - Bring mixture to boil over medium heat, stirring constantly. Reduce heat and simmer for 2 minutes until agar agar is fully dissolved.
04 - Stir in sugar until completely dissolved. Remove from heat and add fruit juice, mixing well. Let cool for 2-3 minutes, watching closely to prevent setting.
05 - Distribute diced fruits evenly in a silicone mold or glass dish, ensuring balanced presentation.
06 - Gently pour agar agar mixture over arranged fruits, covering completely. Cool to room temperature, then refrigerate at least 45 minutes until fully set.
07 - Unmold or cut into cubes. Serve chilled for best texture and flavor.

# Expert Hints:

01 -
  • Its impossibly light and refreshing, perfect when you want something sweet without the heaviness of traditional desserts
  • The presentation looks stunningly professional but requires zero actual skill to achieve
02 -
  • Fresh pineapple and kiwi contain enzymes that prevent agar agar from setting, so blanch them briefly in boiling water first
  • The mixture sets quickly once cooled, so work efficiently when pouring it over your arranged fruit
03 -
  • Silicone molds make unmolding effortless, but glass dishes work perfectly fine if you plan to serve it directly from the container
  • Let the jelly sit at room temperature for 5 minutes before serving to soften slightly and release more flavor
